Spanish style omelet

 

In Fes we found a bakery that sold whole wheat Moroccan bread. In all our enthousiasm we bought more than we could eat before it would get old. And so we were left with old whole wheat bread which we were definitely not going to waste. Several times I made a special Spanish style omelet. Enjoy this recipe.

 


For four people you buy 8 eggs. Be careful, because in Morocco they sell you eggs in plastic bags. Tricky when you`re on a bike, so purchase them right before camping. Cut up a lot of garlic (you`ll chase bad people away and as a positive side effect potentially Malaria mosquitos) and fry this with some oil. Meanwhile, mix the eggs with several handsfull of breadcrumbs until the mixture is really really thick. Add the garlic to this and put more oil in the frying pan, which is about 12 cm wide and 3 cm deep. Poor the mixture into the pan. It will be filled to the edge. Put your camping stove as low as it can handle and be patient now. It will take a while for the omelet to get completely cooked. When you want to turn it, remember not to throw it over. The camping frying pan has a folding handle so you would make a mess.

 

If you serve this with a veggie mixture that has too much gingerpowder it will make you very sick, so be aware.

    Chantal,
    you know I have been wanting to write a cookbook…
    this recipe and the one before (chickpea soup, I think?) are SO fabulous, funny and real. I love them. Please keep writing these whenever you find the inspiration.
