While travelling, it`s a challenge to continue eating healthily. However, this is essential if we want have enough energy for biking and feeling good. I enjoy discovering new ways of cooking, with the available ingredients. Once in a while I would like to share an idea with you. This is the way I prepared the food, although a lot of variety is possible of course. Last month our favourite camping dish was chickpea soup. Here’s how you do it:
Start boiling water in the morning and add spices to make broth, while breaking up camp (In Holland and France we would use cubes to make bouillon). Add a couple handfulls of dried chickpeas if you want to make a dish for two. When it`s time to pack the stove, pour the mixture into a thermos and put this away with the tent. Let time do its job.
While pitching the tent in the evening, start the stove and start boiling the chickpea mixture that has been soaking all day. Cut up two onions, a couple of garlic cloves, a carrot and a zuchini. Ignore that now your hands will smell like onion for two more days. Add the veggies to the soup and let it cook for ten minutes. Now the chickpeas and vegetables should be nice and soft.
Serve with whole wheat bread. Good source for protein and fibre.
